Hands up if you are guilty of throwing the vegetable scraps like the below picture away in the food waste bin?

Vegetable scraps

Well, now it is time to start making something delicious with those vegetable scraps and that’s where air fryer vegetable chips come into play! Are you craving a delicious snack but don’t want to sacrifice your health? Try making air fryer vegetable chips and you won’t be disappointed!

This recipe for air fryer vegetable chips is perfect for when you’re craving something crunchy and savory. It’s easy to make and requires few ingredients! You can also customize it with your favorite herbs and spices for extra flavor.

What’s the best type of vegetables to use?

I would say any type of root vegetable such as potatoes, sweet potatoes, carrots, beets and even turnips. This is because root vegetables have a higher carbohydrate content, which means they will be crispier when cooked.

Ingredients:

  • 2 cups of assorted root vegetables (we used rainbow, carrots, sweet potatoes, potatoes and parsnips)
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • Pinch garlic powder
  • Optional: 1 teaspoon of Italian seasoning or other herbs/spices of your choice

Instructions:

Using a potato peeler, peel the vegetables into thin strips. If they are too thick, they will not cook evenly in the air fryer.

In a large bowl, toss the vegetable strips with olive oil, salt and garlic powder (or other seasonings of your choice).

Preheat your air fryer to 400 degrees Fahrenheit.

Place the vegetable strips in the air fryer basket, making sure to spread them evenly so that they don’t overcrowd each other. Cook for 4-6 minutes, shaking the basket every minute.

Remove from the air fryer and enjoy!

Air Fryer vegetable chips are best enjoyed fresh but can also be stored in an airtight container for up to three days. Enjoy!

For a little something extra, try dipping your vegetable chips in hummus or Greek yogurt for an added boost of flavor and nutrition. For an even healthier snack, add some nuts to the mix for a delicious combination of protein and healthy fats.

Substitutions:

These vegetable chips can be made with any kind of root vegetable you like. Substitute whatever you have on hand and adjust the cooking time accordingly.

You can also use other herbs and spices such as rosemary, thyme or paprika to give your chips an extra flavor boost. You can also try adding some nutritional yeast for a cheesy flavor.
