Air Fryer Vegetable Chips

Delicious and healthy air fryer vegetable chips! This recipe is easy to make with few ingredients, and it's a great way to use up any vegetables that have been sitting in your fridge for too long.

Ingredients
  

  • 2 cups Assorted root vegetables (we used rainbow, carrots, sweet potatoes, potatoes and parsnips)
  • 2 tbsp Avocado oil
  • ½ tsp Salt
  • Pinch Garlic powder
  • Optional: 1 teaspoon of Italian seasoning or other herbs/spices of your choice

Instructions
 

  • Using a potato peeler, peel the vegetables into thin strips.
  • If they are too thick, they will not cook evenly in the air fryer.In a large bowl, toss the vegetable strips with olive oil, salt and garlic powder (or other seasonings of your choice).
  • Preheat your air fryer to 400 degrees Fahrenheit.
  • Place the vegetable strips in the air fryer basket, making sure to spread them evenly so that they don’t overcrowd each other. Cook for 4-6 minutes, shaking the basket every minute.
