I know what you might be thinking….Pound cake is already pretty good when you make it the old fashioned way (in an oven). So why in the world would I bother making it in my air fryer? The answer lies in the fact that pound cake made in your air fryer comes out much fluffier than one made in an oven. Also, it’s so much more easier to make.
The texture on this air fryer pound cake is so soft and fluffy, you’ll swear you’re eating clouds! This recipe is perfect for those of us who don’t have ovens or simply don’t want to bother with baking in the oven. You can whip up this delicious treat in minutes.
Just look at all those delicious little pockets of air! It’s like a cake made out of clouds! This might be one of my favorite recipes to use my air fryer for so far (except maybe my sweet potato fries).
Ingredients
- Unsalted butter, softened to room temperature
- White granulated sugar
- Eggs, at room temperature
- All purpose flour
- Vanilla extract
- Baking powder
- Salt
- Lemon juice
- Confectioners sugar
Instructions
- Cream the butter and sugar into a mixing bowl until fluffy using a stand mixer or hand mixer. Add in each egg one at a time until fully combined.
- Slowly add in the vanilla extract into the mixing bowl and mix again until smooth.
- Sift in the flour, baking powder and salt slowly while mixing on low speed to avoid spraying ingredients everywhere.
- Lightly butter the pound cake pan, pour batter into it and air fry.
- After it has cooked, use a toothpick to check the doneness of the pound cake before removing from the air fryer, making sure it comes out clean.
- Mix together the confectioners sugar and lemon juice. Pour it on top of the cake.
- Let it cool and enjoy!
Substitutes for any ingredients
As with many recipes, you can easily substitute ingredients to make this air fryer pound cake recipe your own. If you don’t have all purpose flour to hand, simply use self raising flour. You can also use coconut oil instead of butter but the texture may be slightly different. If you’re feeling luxurious, why not put some chocolate chips inside this recipe too!

Yes, if you want to double this recipe just keep in mind that your air fryer will have a hard time fitting a whole double recipe. It also depends on the size of your cake pan/pans. If using smaller pans only fill them half full.

- 3 tbs lemon juice

- Slowly add in the vanilla extract into the mixing bowl and mix again until smooth.
- Sift in the flour, baking powder and salt slowly while mixing on low speed to avoid spraying ingredients everywhere.
- Lightly butter the pound cake pan, pour batter into it and air fry for 1 hour 10 minutes on 300 degrees Fahrenheit.
