  • 8 oz spaghetti
  • 1 lb center-cut pork, diced
  • 2 cups water
  • 1 red bell pepper, sliced
  • 1 lb baby Bok choy, sliced
  • 2 small carrots, julienned
  • 1 yellow onion, sliced
  • 4 cloves of garlic, minced
  • 3 tbsp dark soy sauce
  • 2 tbsp light soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • 1 tbsp mirin
  • Oil of your choice (vegetable oil, canola oil)
  • Salt (optional)
  • Pepper (optional)
  • Sesame seeds (optional)

Instructions:

Marinating of chicken
  1. Begin by washing all your produce thoroughly.
  2. Marinate the diced pork with half of the dark soy sauce and sesame oil. Mix well until the pork is evenly coated.
  3. Set your Instant Pot to the Sauté setting on high. Add 1 tbsp of oil to the pot and allow it to heat up.
  4. Add the marinated pork to the pot and sauté until it turns golden brown. Once done, remove the pork from the pot and set it aside.
  5. Slice the onions, baby Bok choy, carrots, and red bell pepper. Mince the garlic. Set them aside.
  6. Add the minced garlic to the Instant Pot and sauté for about 30 seconds or until it becomes golden brown.
  7. Pour the water into the Instant Pot and deglaze the bottom by scraping it clean with a spatula.
  8. Break the spaghetti in half and lay them in a crisscross pattern over the liquid. Avoid stirring the noodles after creating the pattern. Gently push the spaghetti down so that it is submerged in the liquid.
  9. Close the Instant Pot with the lid, seal the valve, and pressure cook on high for 4 minutes.
  10. Once the 4 minutes of pressure cooking have passed, quickly release the natural pressure release valve and let the pot rest for an additional 4 minutes.
  11. Open the Instant Pot and stir the noodles. Add the remaining dark soy sauce, light soy sauce, hoisin sauce, and mirin to the noodles. Stir until all the ingredients are well combined.
  12. Switch the Instant Pot to the Sauté setting on high and add the sliced Bok choy, red bell pepper, onions, carrots, and the cooked pork. Stir often for about 5-8 minutes, depending on how crispy you like your vegetables.
  13. Garnish the Pork Lo Mein with sesame seeds and season with salt and pepper to taste.
