Air fryer bbq cornflake fried chicken

This air fryer fried chicken dish has all the crunch and flavor you crave from traditional fried chicken, with an added barbecue twist! Coated in a mixture of cornflakes, flour and spices before being cooked to crispy perfection in your air fryer – this recipe is sure to become a family favorite.

Ingredients

  • 2 boneless skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 eggs, whisked
  • 2 cups cornflakes cereal, crushed into small pieces – ⅓ cup melted butter
  • ¼ cup of your favorite BBQ sauce for serving (optional)

Instructions:

1. In a shallow bowl, mix together the flour, garlic powder, smoked paprika and salt and pepper

2. In a separate bowl, whisk together the eggs.

3. Dip each piece of chicken into the egg mixture then roll it in the flour mixture to coat evenly.

4. Place the crushed cornflakes onto a plate or shallow dish and press each piece of chicken firmly into it so that it is completely covered on all sides with crumbs.

5. Place the pieces of chicken onto an air fryer tray or basket and spray lightly with oil (optional).

6. Cook at 350F for 22 minutes flipping once halfway through cooking time until golden brown and cooked through.

7. Heat up BBQ sauce and butter for 15-20 seconds in the microwave (or on stove) so it is runnier.

8. Brush on gently to the fried chicken pieces.

9. Place in the air fryer for 1-2 minutes on 400F.

Substitutions:

If desired, you can use crushed crackers or nuts instead of cornflakes cereal for breading
