Air Fryer Vegetable Chips
Delicious and healthy air fryer vegetable chips! This recipe is easy to make with few ingredients, and it's a great way to use up any vegetables that have been sitting in your fridge for too long.

- 2 cups Assorted root vegetables (we used rainbow, carrots, sweet potatoes, potatoes and parsnips)
- 2 tbsp Avocado oil
- ½ tsp Salt
- Pinch Garlic powder
- Optional: 1 teaspoon of Italian seasoning or other herbs/spices of your choice
Using a potato peeler, peel the vegetables into thin strips.
If they are too thick, they will not cook evenly in the air fryer.In a large bowl, toss the vegetable strips with olive oil, salt and garlic powder (or other seasonings of your choice).
Preheat your air fryer to 400 degrees Fahrenheit.
Place the vegetable strips in the air fryer basket, making sure to spread them evenly so that they don’t overcrowd each other. Cook for 4-6 minutes, shaking the basket every minute.
