Ube Horchata is a refreshing drink made with ube, a purple yam. It's perfect for satisfying your sweet tooth while cooling you off on a hot day. The best part about ube horchata is that it's easy to make at home with just a few ingredients.

Ingredients
  

  • 3 cups Rice milk
  • cups Condensed milk
  • cups Evaporated milk
  • 1 tsp Ground cinnamon
  • 1 tsp Vanilla extract
  • 1 tbsp Sugar
  • 2 cups Ice cubes
  • 2 tbsp Ube powder 
  • ¼ tsp Ube extract 

Instructions
 

  • In a blender, combine the rice milk, condensed milk, evaporated milk, ground cinnamon, vanilla extract and sugar. Blend until combined.
  • Add the ice and blend again until smooth.
  • In a small bowl, mix together the ube powder and ube extract until fully combined.
  • Pour the ube mixture into the blender and blend for 30 seconds or until fully incorporated with the other ingredients.
  • Serve your ube horchata over ice in tall glasses garnished with a sprinkle of cinnamon if desired!
