Ingredients
  

  • 1 block Firm tofu
  • 2 tbsp Olive oil or cooking oil of your choice
  • 1 Small onion, diced
  • 1 Bell pepper, diced
  • 2 Cloves garlic, minced
  • 1 tsp Turmeric powder (for color)
  • ½ tsp Ground cumin
  • ½ tsp Paprika
  • Salt and pepper, to taste
  • Optional toppings: chopped fresh herbs (such as parsley or cilantro), nutritional yeast, hot sauce

Instructions
 

  • Start by preparing the tofu. Drain the tofu and gently press it between paper towels or a clean kitchen towel to remove excess moisture.
  • Crumble the tofu into small pieces with your hands or a fork, resembling the texture of scrambled eggs.
  • Heat the olive oil in a large skillet over medium heat.Add the diced onion and bell pepper to the skillet and sauté until they become softened and lightly browned, approximately 5-7 minutes.
  • Stir in the minced garlic and cook for an additional minute until fragrant.Add the crumbled tofu to the skillet, along with the turmeric powder, ground cumin, and paprika. Stir well to evenly coat the tofu with the spices.
  • Cook the tofu scramble for about 5-7 minutes, stirring occasionally, until the tofu is heated through and slightly golden.Season with salt and pepper to taste. Adjust the seasoning as desired.
  • Remove the skillet from the heat and garnish your tofu scramble with optional toppings like chopped herbs, nutritional yeast, or a dash of hot sauce. Serve the tofu scramble warm alongside toast, vegan sausage, or fresh fruit for a complete breakfast experience.
