Yu Shiang Chicken

Ingredients
  

  • 1 lb lb Chicken thigh  cut into small pieces
  • 3 cloves garlic minced
  • 1 thumb Ginger minced
  • 2 Green onions White and greens separated and chopped
  • ¼ cup Soy sauce
  • 1 tbsp Rice wine vinegar
  • 2 tbsp Oyster sauce
  • 1 tbsp Sugar
  • 1 tsp Cornstarch
  • pepper to taste
  • ½ Red bell pepper
  • ½ Yellow bell pepper

Instructions
 

  • In a large bowl, whisk together the marinade ingredients: soy sauce, rice wine, oyster sauce, sugar and cornstarch. Add the chicken and toss to coat. Let sit for at least 15 minutes, or up to a few hours if you have the time.
  • Preheat a large pan or wok over high heat. Add oil, swirling to coat. Add the chicken and cook for a few minutes until browned.
  • Add the sliced yellow pepper and red pepper, garlic, ginger and white parts of the green onion. Cook for a minute until fragrant.
  • Add the sauce and bring to a boil. Cook for a few minutes until thickened.
  • Add the greens of the green onion and give everything a good stir. Serve over rice or noodles.
