Lumpia Isda Recipe (fish egg rolls)

- 15 Lumpia wrappers
- 13 oz Mackerel fish (deheaded, deboned)
- 1 Yellow onion
- 1 Carrot
- 1 Potato
- 2 Garlic cloves
- 1 inch Ginger
- 2 oz Parsley
- 1½ Salt
- 1 Egg
- 3 cup Oil
Place the mackerel in the oven on a baking sheet and cook on 350 degrees Fahrenheit for about 15 minutes or until cooked through and set aside.
Remove the mackerel from the oven and let cool.
Grate the potato, garlic, carrots, onion and ginger.
In a frying pan fry the grated ingredients with oil for about 5 minutes.
Break up the fish so that it’s in small pieces.
Layout the lumpia wrappers on a flat surface.
Place 1 tablespoon of the fish mixture in the center of each wrapper.
Roll up the wrappers, making sure to tuck in the sides.
In a separate pan, heat oil on medium heat and fry the lumpia until golden brown.
This should take about 2 minutes per side.
Remove from the pan and let drain on a paper towel. Serve with your favorite dipping sauce and enjoy!
