One of the most popular variations is ube cheesecake, which combines the rich creaminess of cheesecake with the vibrant purple hue of ube, a Filipino yam. We use the powder here - but it is just as good! The result is a stunning cake that is perfect for special occasions. In addition to its visual appeal, ube cheesecake is also extremely delicious, with a delicate sweetness that is balanced by the tanginess of the cheese. Whether you enjoy it on its own or paired with other fruits and desserts, ube cheesecake is sure to please any palate.

Ingredients
  

  • 1 Cup Cream cheese 
  • 1 Cup Heavy cream 
  • ¾ Cup Icing sugar 
  • 2 tbsp Ube powder
  • ¼ tsp Ube extract 
  • ¼ tsp Vanilla extract 
  • 12 oz Graham crackers
  • 5 oz Melted butter
  • Optional: Whipped cream for topping (optional)

Instructions
 

  • In a bowl, combine the cream cheese, heavy cream, icing sugar, ube powder and extracts until creamy.
  • In a separate bowl, mix together the Graham crackers and melted butter until fully combined.
  • Grease an 8” spring-form pan with butter or cooking spray.
  • Press the graham cracker mixture into the spring-form pan to form the crust.
  • Pour over the cream cheese mixture and spread evenly over the top of the graham cracker crust.
  • Place in refrigerator for at least two hours to chill before serving (you can also place in freezer for one hour).
  • To serve, release from spring-form pan onto a plate and top with whipped cream (optional).
