Bone Marrow Butter

You've probably heard of bone marrow before - it's the spongy tissue that fills the center of bones. You may not have heard of bone marrow butter, however. This nutrient-rich substance is made by slow-cooking bones until the marrow liquefies. The result is a thick, creamy substance that can be used in a variety of ways. In this recipe I have mixed it with butter and parsley.

Ingredients
  

  • ½ cup Salted butter
  • 4 Bone marrow
  • 1 tbsp Fresh parsley

Instructions
 

  • Cube the butter into small pieces and place them in a medium-sized bowl.
  • Add the bone marrow to the butter followed by the fresh parsley.
  • Using an electric whisk, beat these ingredients together until they form a thick and creamy paste.
  • Refrigerate the bone marrow butter for at least an hour before using it.
  • Once the bone marrow butter is chilled, you can use it as a spread on toast or as a finishing touch for steak.
