- 1 lb lb Chicken thigh cut into small pieces
- 3 cloves garlic minced
- 1 thumb Ginger minced
- 2 Green onions White and greens separated and chopped
- ¼ cup Soy sauce
- 1 tbsp Rice wine vinegar
- 2 tbsp Oyster sauce
- 1 tbsp Sugar
- 1 tsp Cornstarch
- pepper to taste
- ½ Red bell pepper
- ½ Yellow bell pepper
In a large bowl, whisk together the marinade ingredients: soy sauce, rice wine, oyster sauce, sugar and cornstarch. Add the chicken and toss to coat. Let sit for at least 15 minutes, or up to a few hours if you have the time.
Preheat a large pan or wok over high heat. Add oil, swirling to coat. Add the chicken and cook for a few minutes until browned.
Add the sliced yellow pepper and red pepper, garlic, ginger and white parts of the green onion. Cook for a minute until fragrant.
Add the sauce and bring to a boil. Cook for a few minutes until thickened.
Add the greens of the green onion and give everything a good stir. Serve over rice or noodles.
