Blue Pancakes

- ⅛ cup Unsalted butter
- 2 cups All-purpose flour
- ¼ cup Sugar
- 1 tsp Baking powder
- 1 Tbs Blue spirulina powder
- 1½ cups Milk
- 2 Eggs
- 2 tbsp Oil
In a large bowl, whisk together the flour, sugar, baking powder and spirulina powder.
In another bowl, whisk together the milk, eggs and oil.
Add the wet ingredients to the dry ingredients and mix until well combined.
Preheat a griddle or frying pan over medium heat.
Add some butter to the pan and use a ¼ cup measure to scoop the batter into the pan.
Cook for 2-3 minutes per side or until golden brown.
Serve with fresh fruit, maple syrup or chocolate sauce.
