Quick Canned Tuna Fried Rice

Fried rice is a classic dish that can be made with just about any leftovers. In this case, we used canned tuna and some frozen mixed vegetables. The best part is that it only takes minutes to throw together and you can customize it however you like. Give this Quick Canned Tuna Fried Rice a try the next time you have leftover rice!

- 4 Eggs
- 2½ cups Cooked long grain rice
- 2 tbsp Sesame oil
- 2 cans Canned tuna (13 oz)
- 1 tsp Salt
- 1 tbsp Light soy sauce
- 2 cups frozen stir fry vegetables
Get a saucepan and add the frozen vegetables and cook for 3-5 minutes, or until thawed.
Add the sesame seed oil and cook for 1 minute.
Add the eggs and scramble until cooked through.
Add the cooked rice and tuna, and stir to combine.
Season with salt and light soy sauce, to taste. Serve immediately. Enjoy!
