Ingredients
  

  • 15 Lumpia wrappers
  • 13 oz Mackerel fish (deheaded, deboned)
  • 1 Yellow onion
  • 1 Carrot
  • 1 Potato
  • 2 Garlic cloves
  • 1 inch Ginger
  • 2 oz Parsley
  • Salt
  • 1 Egg
  • 3 cup Oil

Instructions
 

  • Place the mackerel in the oven on a baking sheet and cook on 350 degrees Fahrenheit for about 15 minutes or until cooked through and set aside.
  • Remove the mackerel from the oven and let cool.
  • Grate the potato, garlic, carrots, onion and ginger.
  • In a frying pan fry the grated ingredients with oil for about 5 minutes.
  • Break up the fish so that it’s in small pieces.
  • Layout the lumpia wrappers on a flat surface.
  • Place 1 tablespoon of the fish mixture in the center of each wrapper.
  • Roll up the wrappers, making sure to tuck in the sides.
  • In a separate pan, heat oil on medium heat and fry the lumpia until golden brown.
  • This should take about 2 minutes per side.
  • Remove from the pan and let drain on a paper towel. Serve with your favorite dipping sauce and enjoy!
