Ingredients
  

  • 2 Baking potatoes
  • ¼ cup Olive oil
  • Sea salt and cracked pepper, to taste
  • 3 cans Drained tuna
  • 2 tbsp Chopped parsley
  • 2 tbsp Lemon juice
  • ¼ cup Mayonnaise
  • Grated Parmesan cheese For topping

Instructions
 

  • Preheat oven to 350°F (175°C). Slice potatoes like hassleback potatoes and place them on an ungreased baking sheet.
  • Spread olive oil over potatoes and sprinkle with sea salt and cracked pepper to taste. Bake for 45 minutes until slightly tender but not too soft
  • Meanwhile in a bowl, mix together drained tuna, parsley, lemon juice and mayonnaise until combined.
  • Spread the mixture evenly over the baked potatoes and top with grated Parmesan cheese, sea salt and black pepper to taste.
  • Return to oven and bake for an additional 10 minutes or until golden brown and bubbling.
  • Serve hot with your favorite side dish or salad.
