Nothing says comfort food like a classic potato cake. This twist on a traditional old-fashioned recipe is made even better with the addition of an air fryer!

With easy prep, minimal ingredients and fast cooking time, you can have delicious homemade potato cakes in under 30 minutes.

What are potato cakes?

They are essentially a thick and hearty potato pancake, made with grated potatoes, onions and eggs as the primary ingredients. In this recipe, we’ve kept it simple with ssalt and pepper to season.

  • 4 cups store-bought mashed potatoes (preferably chilled)
  • ½ cup all-purpose flour
  • ½ teaspoon salt

  • 1 egg
  • Oil to brush on top of the potatoes before cooking (olive oil or coconut oil work well)

Instructions

Preheat air fryer to 350°F (177°C).

In a medium bowl, mix together mashed potatoes, flour, salt and pepper until evenly combined. Make sure all clumps are broken up.

Mash up all the ingredients apart from the oil and egg.

Get a small bowl and crack an egg into it, beating lightly with a fork until the yolk is just broken up – don’t over mix it!

Add the egg mixture to the mashed potato mixture and mix until fully incorporated.

Divide the batter into 8 equal parts using your hands or a spoon and form each part into a flat patty about 3 inches wide and 1 inch thick – this should yield 8 patties total.

Flip over each patty after 15 minutes of cooking time

After 20 minute, they should be slightly firm on the outside with golden color similar to regular french fries when done properly!
