Ingredients

  • Boneless, skinless chicken breasts, cut into small cubes
  • Red onion
  • Bell peppers
  • Olive oil
  • Smoked paprika
  • Black pepper
  • Garlic powder
  • Salt
  • Dried parsley
  • Dried basil

Instructions

  1. Dice the red onion, bell peppers and chicken into bite-sized pieces.
  2. In a large bowl, mix together the chicken cubes, red onion cubes, bell pepper cubes, olive oil, smoked paprika, dried parsley, dried basil, garlic powder, salt and pepper.
  3. Thread the chicken and vegetables onto skewers (if you are using wooden skewers, soak them in water for 30 minutes before using).
  4. Preheat the air fryer to 350 degrees.
  5. Place the skewers in the air fryer basket and cook at 350 degrees for 15-17 minutes, or until the chicken is cooked through.
  6. Serve with your favorite dipping sauce.

This is one of the most delicious ways I have ever made chicken! Plus it’s pretty simple, too! If you want to use wooden skewers then just be sure they are soaked in water for at least an hour before using them so that way they don’t burn in the fryer!

Recipe tips

You can use any type of vegetables that you like in this recipe. Some other good options include zucchini, yellow squash, mushrooms, and cherry tomatoes.

For a more flavorful chicken skewer, try marinating the chicken for a few hours before cooking. Simply place the chicken and vegetables in a large resealable bag with the olive oil and spices, and then refrigerate for at least 2 hours (up to 12 hours).

These chicken skewers are also great for meal prep! Simply cook them ahead of time and then store in an airtight container in the fridge. They will last in the fridge for up to 4 days.

When it comes to making chicken skewers, there really is no wrong way to do it – so have fun and be creative!

Substitutions

If you don’t have smoked paprika, you can use regular paprika or any other type of spice that you like.

If you don’t have red onion, you can use any other type of onion or even diced green onions.

You can also try using different types of bell peppers, such as orange or green bell peppers.

If you’re not a fan of skewers, you can also grill or bake the chicken and vegetables instead.
